Plant protein and fibre fuelled: Chickpea blondies recipe

Have you ever thought about adding chickpeas to your baking recipes?

Chickpeas are a superfood in my opinion. They are a wonderful source of plant based protein, calcium, and iron. Chickpeas are also a good source of vitamin C, magnesium, zinc, copper, and vitamin B6. They are also a great source of fibre.


Chickpeas make a good choice for a snack option because of their nutrient density but also due to the positive effects that they can have on blood sugar balancing, digestion, and increased satiety. This chickpea blondie makes a super bake for all the family. I love to include these as part of a healthy balanced diet. These blondies taste so good, they never last that long in my house!


Recipe

400g tinned chickpeas (drained)

1 tsp baking soda

Good pinch of sea salt

3/4 cup coconut sugar

1/3 cup spelt flour (or buckwheat)

1/4 cup mashed banana

3 tbsp coconut oil (melted)

1/4 cup chocolate chips


Method

Preheat the oven to 180c.

Prepare a lined baking sheet.

Add everything to a blender apart from the chocolate chips. Blend until smooth. Remove.

Mix in the chocolate chips and pour into the baking sheet.

Bake for 30 minutes.

Allow to cool and cut into squares.
