Golden glow carrot and fennel immune soup

This is a super creamy and comforting soup using anti-inflammatory spices such as turmeric and ginger. As well as immune supporting vitamin A and C. Fennel is also a great source of potassium, fibre, calcium, selenium and folate. This is like sunshine in a bowl when you are feeling under the weather.

Ingredients

1 onion diced

1 large fennel bulb

5 large carrots

1 garlic clove

2 medium potatoes

10g ginger

1 tsp ground turmeric or 10g fresh turmeric

750 ml bone broth

400g coconut milk

seasoning - black pepper which helps the absorption of curcumin from turmeric

Method

Put all the ingredients into a pan apart from the coconut milk. Allow to simmer for 20 minutes. Add the coconut milk and cook for a further 10 minutes. Once all the veggies have softened blitz in a blender.

Serve with a selection of seed toppings and a drizzle of coconut cream.
